BUFFALO CHICKEN STUFFED SMOKED AVOCADO

Awesome recipe from our buddy over at @cravens_smoke_pit!

These brought out all the flavor with the perfect amount of heat! I used the Holy Diver from Tacticalories and all the grilling was done on my Traeger grills Timberline 850.

BUFFALO CHICKEN STUFFED SMOKED AVOCADO 

  • Prep Time: 15 Minutes
  • Cook Time: 1 Hour
  • 12 Servings

Ingredients:

  • 12 Boneless Chicken Thighs (appx. 4 oz. Each)
  •  6 Medium Avocados Halved and pitted
  •  1 Cup Mozzarella Cheese (shredded)
  •  1/4 Cup HOLY DIVER or HELL DIVER from Tacticalories 
  •  Salt & Pepper 
  • 12 Tsp Duck Fat*
  • Blue Cheese Dressing 

* Duck fat can be substituted with Bacon tallow, Ghee, or Full Fat butter.

  • Trim any excess fat off of chicken thighs and place into a bowl. 
  • Add buffalo sauce and mix until all chicken is sauced. 
  • Cover with plastic wrap and place in refrigerator for at least one hour. I like to marinate overnight if possible.
  • Pre-heat pellet grill to 300 degrees with lid closed. I used the Traeger apple wood pellets for this cook for added flavor in the chicken and the avocados.
  • Remove the sauced chicken thighs from the refrigerator and season with salt and pepper and place on the pre-heated grill.
  • Half your avocados and remove the pits.
  • Add 1 Tsp of duck fat to each half (or oil of choice)
  •  After chicken has been on the grill for 30 minutes, flip all of the thighs. Add avocados to the grill and close the lid.
  • Check chicken temp after another 15 minutes, and continue checking every 10 minutes after until desired temp is reached. 
  • When chicken has finished, remove from grill, add mozzarella to the avocado halves until cheese has melted through.
  • Chop all of the chicken, and add to the finished avocados. Top with Blue Cheese dressing and more buffalo sauce for more heat.
